Invitation to Japan's Sake Heartland: "Uonuma"

The Master Brewer of Hakkaisan Brewery, Mr. Shigemitu Nagumo, talks about the relationship between the local environment of Japan's Uonuma area and the Hakkaisan Sake he crafts there with Sake Samurai and Hakkaisan Global Brand Ambassador Timothy Sullivan.

Hakkaisan Brewery is located in Minami Uonuma, which is the heartland of Niigata Prefecture in central Japan. During the winter season, the snow can reach a depth of six to nine feet at the foot of Hakkaisan Mountain. For generations, living in snow country has been a challenge. However, by supplying pristine brewing water and purifying the surrounding air, the snow offers natural gifts essential to the crafting of Hakkaisan Sake.

Since joining Hakkaisan Brewery in 1972, Shigemitsu Nagumo has been involved in our brewing business for 48 years, during which time he has honed his brewing skills and trained company employees. Currently he is in charge of 83 engineers. In addition to training in-house successors, he also serves as the director of the Niigata Sake Brewery Research Group, and is currently active as a lecturer at the association and a special lecturer at Niigata Prefectural Sake School.

Timothy Sullivan is a Sake Samurai, Brand Ambassador and Sake Educator with a passion for sharing his love of sake with the world. After discovering sake in 2005, Timothy founded America's first English language sake blog and education website: UrbanSake.com. Within two years, he received the prestigious Sake Samurai award from the Japan Sake Brewer's Association for his work and dedication to promoting sake outside of Japan. In 2010, In 2016, Timothy was the first person ever to receive a Cultural Activities Visa from the Japanese Government to study the art of sake brewing and he lived and worked for 12 months at the Hakkaisan sake Brewery in Niigata. Since then, Timothy has become the Global Brand Ambassador for Hakkaisan and he continues to teach and lecture about sake around the world.
